Double Chocolate Chip Peppermint Cookies

1 Cup Thick Almond Butter
1 Cup Coconut Sugar
1 Egg
1/2 Cup Cocoa Powder
1 tsp Baking Soda
1-2 tsp Peppermint Extract
pinch of salt
1/2 Cup Dairy Free Chocolate Chips

  1. Preheat the oven to 350 degrees
  2. In a large mixing bowl, combine almond butter and coconut sugar.  Then add egg and mix until well combined
  3. Add the cocoa powder, baking soda, peppermint extract and salt.  Mix again to combine
  4. Stir in the chocolate chips
  5. Take 2 tbsp of dough and roll into a round ball. Place on a silpat or a parchment paper lined baking sheet
  6. Bake for 10 minutes
  7. Let cool for 5-10 minutes
